If you are new to molecular gastronomy or modern cuisine, you might not be familiar with a product called, “Pure-Cote B790”. Pure-cote B790 makes the creation of edible glass, films and glossy coating for baked goods and confections possible without heating to hydrate the starch.
What is Pure-Cote B790?
Pure-Cote B790 modified corn starch is a special low viscosity starch that requires cook-up to 180 degrees Fahrenheit to become fully functional. The clear flexible films with excellent sheen made with Pure-Cote dry quickly and without changing the original flavour profile. Liquids thickened with Pure-Cote dry into a film at room temperature. The finished films are water soluble.
Variety of Uses:
- as garnishes when made into a film or glass
- a useful binding agent in cereal and puffed snack coating
- an aid for baked goods and confections to form smooth and glossy coating
With 100g of liquid, 10-15g of Pure-Cote B790, blend very well, heat, stir and pour onto acetate. You can cast the film by spreading the Pure-Cote solution on a plastic or glass surface. Let it dry at room temperature overnight or in a dehydrator. Do not over-dry the Pure-Cote film and the result will be a clear and quite elastic film. If the Pure-Cote starch is not fully hydrated, the resulting film will not be clear.
How to Create a Pure-Cote B790 Flavoured Glass or Film:
Let’s say you want to make a glass made of fresh orange and pear juice (yum!), take 200g of juice (liquid), place in a blender and blend in 24g of Pure-Cote B790.Take a large spoonful of the liquid and pour it onto an acetate sheet, evenly. Let it dry at room temperature for several hours or overnight. Once it has dried, you can break up the glass or film and use them as garnishes on dishes! Edible and delicious. For an even crispier texture, you can dehydrate the dried pieces of glass for several hours.
