These dark red, pleasantly tart cherries are hand-cultivated at peak ripeness, pitted, then inspected for uniformity, plumpness and quality. Distillerie du Perigord has been making award-winning French ‘eaux de vie’ since they opened in 1860. The clear, colorless fruit brandy is made by double distilling whole Morello cherries. The resulting liquid takes on a subtle cherry flavour with an almond-esque finish achieved by fermenting the pits as well. It’s an elegant, refined liqueur that takes a more nuanced flavour approach than the overwhelming sweetness typically found in other cherry liqueurs.
